🏛 A little history

Naan is a leavened flatbread with a long history across Central and South Asia, traditionally slapped onto the hot wall of a clay tandoor oven where it puffs and chars.

Enriched with yogurt and sometimes milk, it is softer and more tender than unleavened flatbreads, and is a staple alongside curries across India and beyond.

👩‍🍳 Let's bake!

  1. Mix all dough ingredients into a soft dough; knead 6 minutes. Rise until doubled, about 1 hour.
  2. Divide into 6 balls. Roll each into a teardrop about 5 mm thick.
  3. Heat a cast-iron skillet until very hot.
  4. Lay a naan in the dry skillet; when big bubbles form (about 1 minute), flip and cook the other side until charred spots appear.
  5. Brush with butter or garlic-ghee and keep warm under a towel.
  6. Repeat with the rest.

💡 Chef Axl's tips

  • A screaming-hot pan mimics the tandoor and makes them puff.
  • Brush a little water on top before cooking for extra blistering.
