During the First World War, families baked them to send to soldiers of the Australian and New Zealand Army Corps — the ANZACs. There are no eggs in the dough, so the biscuits stayed good on the long sea voyage across the world.
The magic is golden syrup and rolled oats, held together without any egg. To this day they're baked every year around Anzac Day, and the smell of oats and coconut toasting in the oven is pure Aussie comfort — a treat with a hundred years of history in every bite.
